I hadn't made a layer cake before and ever since I had tried the cake from the Cheesecake Factory, I knew I had to make this cake. Thanksgiving seemed like the perfect occasion to make it. I looked for some recipes and came across the one on &lt;a href="http://www.erinsfoodfiles.com/2010/04/lincolns-red-velvet-cheesecake-cake.html"&gt;Erin's Food Files&lt;/a&gt;.&lt;br /&gt;&lt;br /&gt;The cake turned out great. I was pretty impressed with myself. It looked really good and tasted amazing. I will definitely be making this cake again! I liked the cream cheese frosting, it wasn't too sweet which was something I worried about. It was the prefect match to it all. I was also thrilled that for the first time, my cheesecake didn't crack! Even though it was the center layer and no one would see the cheesecake itself, I was so happy that it did not crack and it was soooo yummy. My hubby approved and he loves cheesecake. It took a lot of restraint for him not to devour the cake before Thanksgiving. I will be using this cheesecake recipe again.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.flickr.com/photos/sherthebear/6416729867/" title="IMG_7940 by sherthebear, on Flickr"&gt;&lt;img src="http://farm8.staticflickr.com/7161/6416729867_3f89525cb3.jpg" width="500" height="333" alt="IMG_7940"&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Layered Red Velvet Cheesecake&lt;/strong&gt;&lt;br /&gt;From: &lt;a href="http://www.erinsfoodfiles.com/2010/04/lincolns-red-velvet-cheesecake-cake.html"&gt;Erin's Food Files&lt;/a&gt;&lt;br /&gt;Cheesecake adapted from &lt;a href="http://www.marthastewart.com/313705/classic-cheesecake"&gt;Martha Stewart&lt;/a&gt;&lt;br /&gt;Red velvet cake and frosting adapted from &lt;a href="http://kelseysappleaday.blogspot.com/2008/12/red-velvet-cake-with-cream-cheese.html"&gt;Apple a Day&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;For the cheesecake:&lt;br /&gt;1 1/4 pounds bar cream cheese (20 oz), room temperature&lt;br /&gt;3/4 cups sugar&lt;br /&gt;1/2 teaspoon finely grated lemon zest, plus 1/2 tablespoon fresh lemon juice&lt;br /&gt;1/4 teaspoon coarse salt&lt;br /&gt;2 large eggs&lt;br /&gt;1/2 cup sour cream&lt;br /&gt;&lt;br /&gt;For the cake:&lt;br /&gt;2 1/2 c. cake flour&lt;br /&gt;1 1/2 c. sugar&lt;br /&gt;1 tsp. baking soda&lt;br /&gt;1 TBSP cocoa powder&lt;br /&gt;1 tsp. salt&lt;br /&gt;2 eggs&lt;br /&gt;1 1/2 c. vegetable oil&lt;br /&gt;1 c. buttermilk&lt;br /&gt;2 TBSP (1 oz.) red food coloring&lt;br /&gt;1 tsp. vanilla extract&lt;br /&gt;1 tsp. white distilled vinegar&lt;br /&gt;&lt;br /&gt;For the frosting:&lt;br /&gt;12 oz. cream cheese, softened&lt;br /&gt;12 oz. butter, softened&lt;br /&gt;1 1/2 tsp. vanilla extract&lt;br /&gt;3 c. confectioners' sugar&lt;br /&gt;&lt;br /&gt;1 bar white or dark chocolate (Optional for decoration), I used Ghiradelli&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;For cheesecake:&lt;br /&gt;Preheat oven to 325 degrees. Set a kettle of water to boil. Using an electric mixer, beat cream cheese on medium until fluffy, scraping down side of bowl. Gradually add sugar, beating until fluffy. Beat in lemon zest and juice, and salt. Beat in eggs, one at a time, scraping down side of bowl after each addition. Beat in sour cream.&lt;br /&gt;&lt;br /&gt;Cut parchment paper in a circle and line the bottom of the cheesecake pan. Wrap bottom half of pan in foil. Pour in filling; place in a roasting pan. Pour in boiling water to come halfway up side of springform. Bake until just set in center, about 45 minutes. Remove pan from water; let cool 20 minutes. Run a paring knife around edge; let cool completely. Cover; chill overnight, then wrap in plastic wrap and freeze.&lt;br /&gt;&lt;br /&gt;For the cake:&lt;br /&gt;Preheat oven to 350°. Sift together flour, sugar, baking soda, cocoa, and salt into a medium bowl.&lt;br /&gt;&lt;br /&gt;Beat eggs, oil, buttermilk, food coloring, vanilla, and vinegar in a large bowl with an electric mixer until well combined. Add dry ingredients and beat until smooth, about 2 minutes.&lt;br /&gt;&lt;br /&gt;Divide batter evenly between 2 greased and floured 9" round cake pans and bake 25-30 minutes, rotating halfway through, until a toothpick inserted in the center of each cake comes out clean. Let cakes cool 5 minutes, then invert each onto a plate, then invert again onto a cooling rack. Let cakes cool completely, then level.&lt;br /&gt;&lt;br /&gt;Frosting:&lt;br /&gt;Beat cream cheese, butter, and vanilla together in a large bowl with an electric mixer until combined. Add sugar and beat until frosting is light and fluffy, 5–7 minutes.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.flickr.com/photos/sherthebear/6416755611/" title="IMG_7715_31 by sherthebear, on Flickr"&gt;&lt;img src="http://farm8.staticflickr.com/7174/6416755611_13a2d5c7a7.jpg" width="500" height="333" alt="IMG_7715_31"&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Assembly:&lt;br /&gt;Place bottom layer on cake stand. Remove cheesecake from freezer, unwrap, and remove from metal bottom, then peel off parchment paper. Place cheesecake layer on top of the bottom layer of the red velvet cake. If the cheesecake is wider than the cake, and it is necessary to to trim it, wait approximately 10 minutes for the cheesecake to soften, then trim it with a knife. Place top layer of cake on top of the cheesecake, and coat with a generous layer of the cream cheese frosting to act as the crumb coat. Be careful not to get any red velvet crumbs in the bowl of frosting! Refrigerate approximately 30 minutes, then frost with as much of the remaining frosting as necessary. Top with shaved white chocolate and/or shaved dark chocolate. Refrigerate until ready to serve. Since it was Cinco de Mayo, I whipped up Margarita cupcakes (a recipe I had been dying to try) and red velvet cupcakes. The Margarita cupcakes are really easy since it starts off with a boxed cake base. It was pretty good. All my students loved them. The cupcakes were devoured. There are recipes out there with tequila, but since they were for students, though they are college student, I thought I would be a responsible adult and keep that out for this run.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.flickr.com/photos/sherthebear/5691891239/" title="2011-05-05_10-59-59_486 by sherthebear, on Flickr"&gt;&lt;img src="http://farm4.static.flickr.com/3238/5691891239_4f0e850710.jpg" alt="2011-05-05_10-59-59_486" height="282" width="500" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Margarita Cupcake + Lime Cream Cheese Frosting&lt;br /&gt;From: &lt;span style="font-size:large;"&gt;&lt;/span&gt;&lt;a href="http://www.hostessblog.com/2009/05/margarita-cupcakes-lime-frosting/"&gt;Hostess with the Mostess&lt;/a&gt;&lt;br /&gt;&lt;p&gt;&lt;strong&gt;Cupcakes:&lt;br /&gt;&lt;/strong&gt;1 box white cake mix&lt;br /&gt;8 oz margarita mix (liquid)&lt;br /&gt;2 oz tequila&lt;br /&gt;1 oz Grand Marnier&lt;br /&gt;3 egg whites&lt;br /&gt;2 Tbsp vegetable oil&lt;br /&gt;1 Tbsp grated lime zest&lt;/p&gt; &lt;p&gt;&lt;strong&gt;Lime Buttercream Icing:&lt;/strong&gt;&lt;br /&gt;8 Tbsp butter, softened&lt;br /&gt;8 oz cream cheese, softened&lt;br /&gt;2 Tbsp lime juice (approx 2 fresh limes)&lt;br /&gt;1 Tbsp margarita mix&lt;br /&gt;1 tsp lime zest&lt;br /&gt;4-5 cups powdered (confectioners’) sugar&lt;br /&gt;&lt;br /&gt;&lt;/p&gt; &lt;p&gt;&lt;span style="color: rgb(0, 128, 0);"&gt;&lt;strong&gt;DIRECTIONS&lt;/strong&gt;&lt;/span&gt;&lt;/p&gt; &lt;p&gt;&lt;strong&gt;1. &lt;/strong&gt;Preheat oven to 350º and prepare muffin pans.&lt;/p&gt; &lt;p&gt;&lt;strong&gt;2. &lt;/strong&gt;Combine margarita mix, tequila, and Grand Marnier in a large glass and stir well. (I did not use tequila or Grand Marnier, I increased the margarita mix to 10 oz)&lt;br /&gt;&lt;/p&gt; &lt;p&gt;&lt;strong&gt;3. &lt;/strong&gt;In large bowl, combine cake mix, egg whites, lime  zest, vegetable oil, and margarita mixture from step one. Stir  ingredients together, then beat with an electric mixer on low to medium  speed for approximately 2-3 minutes.&lt;/p&gt; &lt;p&gt;&lt;strong&gt;4. &lt;/strong&gt;Spoon the batter into prepared muffin pans. Fill each cup/liner about 2/3 full.&lt;/p&gt; &lt;p&gt;&lt;strong&gt;5. &lt;/strong&gt;Bake at recommended temperature on cake mix box  (usually 325º – 350º) for 20 – 25 minutes or until toothpick inserted  into the center of a cupcake comes out clean.&lt;/p&gt; &lt;p&gt;&lt;strong&gt;Icing:&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;6. &lt;/strong&gt;In a large bowl, combine butter, cream cheese, lime  juice, margarita mix, and lime zest. Beat with an electric mixer until  light and fluffy.&lt;/p&gt; &lt;p&gt;&lt;strong&gt;7. &lt;/strong&gt;Add powdered sugar, one cup at a time, and  continue beating until smooth. I love peppermint and chocolate, it is such a great combination. The recipe looked easy enough. It has been quite busy this holiday season and I needed an easy treat to make and give as gifts. Now was a great time to give it a try.&lt;br /&gt;&lt;br /&gt;Peppermint Bark&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;12 ounce milk chocolate melts&lt;br /&gt;12 ounce white chocolate melts&lt;br /&gt;2 teaspoons peppermint extract&lt;br /&gt;10 peppermint candy canes, crushed, divided&lt;br /&gt;&lt;br /&gt;Directions&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Line a 9X14 inch cookie pan with aluminum foil.&lt;/li&gt;&lt;li&gt;Melt the milk chocolate in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1  to 5 minutes.  Do not overheat or  chocolate will scorch.&lt;/li&gt;&lt;li&gt;Stir in the peppermint extract. Spread the  chocolate evenly in the prepared pan; chill for about 5 minutes.                 &lt;/li&gt;&lt;li&gt;Meanwhile, melt the white chocolate in a  microwave-safe glass or ceramic bowl in 30-second intervals, stirring  after each melting, for 1 to 5 minutes. Stir in 1/4 cup of the crushed  candy canes.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Spread the white chocolate mixture evenly over the milk  chocolate. Sprinkle the remaining candy cane pieces evenly over the  white chocolate layer. Chill until set, about 1 hour. But others like it and it is a staple for Thanksgiving so I thought I would give it a shot for Thanksgiving. I figured it would be a nice alternative to the canned stuff. It was incredibly easy and actually quite yummy. I may actually like cranberry sauce now.&lt;br /&gt;&lt;br /&gt;Cranberry Sauce&lt;br /&gt;From: &lt;a href="http://annies-eats.com/2010/11/24/cranberry-sauce/"&gt;Annie's Eats&lt;/a&gt;&lt;em&gt;&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;/em&gt;&lt;br /&gt;¾ cup water&lt;br /&gt;1 small orange, zested and juiced&lt;br /&gt;2/3 cup sugar, plus more to taste&lt;br /&gt;12-16 oz. fresh or frozen cranberries&lt;p&gt;&lt;/p&gt; &lt;p&gt;&lt;em&gt;Directions:&lt;/em&gt;&lt;br /&gt;&lt;/p&gt;&lt;ol&gt;&lt;li&gt;Combine the water, orange zest and juice, and sugar in a medium saucepan  over medium heat.  Cook, stirring occasionally, until the sugar is  dissolved.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Stir in the cranberries and bring the mixture to a boil.   Lower the heat and let simmer uncovered, about 15 minutes, until the  cranberries have popped and the sauce is thickened.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Remove from heat  and let cool completely.  Sauce will thicken as it cools. I really like the recipe and have made it again and again and decided to make it again this Easter. Mashed potatoes and gravy always go well with a pot roast. This was seriously so easy and so yummy!! I will definitely be making this again. With a spoon, remove the seeds and white membrane (the source of the heat; leave a little if you like things HOT).&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Smear softened cream cheese into each jalapeno half.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Wrap jalapeno with bacon pieces (1/3 slice). Secure by sticking toothpick through the middle. (At this point, you can freeze them, uncooked, in a Ziploc bag for later use).&lt;/li&gt;&lt;li&gt;Bake on a pan with a rack in a 375-degree oven for 20-25 minutes. You don’t want the bacon to shrink so much it starts to the squeeze the jalapeno. If, after 20 minutes, the bacon doesn’t look brown enough, just turn on the broiler for a couple of minutes to finish it off. Cover with salsa verde and chicken (if desided). Cook on low for 6-8 hours. Shred and enjoy with tortillas and rice. Definitely something I will whip up again.&lt;br /&gt;&lt;br /&gt;Pizza Swirls&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;1 (10 ounce) can refrigerated pizza crust dough&lt;br /&gt;1/4 pound Genoa salami, thinly sliced&lt;br /&gt;1/4 pound pepperoni sausage, sliced&lt;br /&gt;1/4 pound provolone cheese, sliced&lt;br /&gt;1/2 cup shredded mozzarella cheese&lt;br /&gt;1 jar of pizza sauce&lt;br /&gt;&lt;br /&gt;Directions&lt;br /&gt;&lt;br /&gt;Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking sheet.&lt;br /&gt;&lt;br /&gt;Roll pizza crust dough into an approximately 10x14 inch rectangle on the baking sheet. Layer with thin layer of pizza sauce, Genoa salami, pepperoni, and provolone cheese. Sprinkle with mozzarella cheese to within 1/2 inch from edges of the dough. Roll jelly roll style. Seal the edge with a fork.&lt;br /&gt;&lt;br /&gt;Bake in the preheated oven 25 minutes, flip over and bake for another 5 minutes. Let cool for a few minutes before slicing into 1 inch pieces to serve. I decided to try a different recipe and I am sure glad that I tried this recipe out. This was definitely a good mac and cheese recipe, much better than the recipe I tried out &lt;a href="http://rumblytumblytreats.blogspot.com/2008/05/its-all-in-cheese-mac-and-cheese.html"&gt;last year&lt;/a&gt;. I think the dry mustard and egg made a difference. I didn't get a chance to get a picture, but it was quite yummy. I will make this one again.&lt;br /&gt;&lt;br /&gt;Pioneer Woman’s Baked Mac and Cheese&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;4 cups uncooked macaroni&lt;br /&gt;4 tbsp. butter&lt;br /&gt;1/4 cup all-purpose flour&lt;br /&gt;2 1/2 cups whole milk&lt;br /&gt;2 tsp. dry mustard&lt;br /&gt;1 egg, beaten&lt;br /&gt;1 lb. cheese, grated (I used all cheddar)&lt;br /&gt;1/2 tsp. salt&lt;br /&gt;1/2 tsp. seasoned salt&lt;br /&gt;1/2 tsp. ground black pepper&lt;br /&gt;Dashes of cayenne, paprika, and thyme (optional) – (I used all three)&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;Preheat the oven to 350 degrees F.  Cook macaroni according to package directions until slightly firm.  Drain and set aside.&lt;br /&gt;&lt;br /&gt;In a large pot, melt the butter over medium-low heat.  Whisk in the flour and cook the mixture for five minutes, whisking constantly and being careful not to burn.  Add the milk to the pot, stir in the dry mustard, and whisk until smooth.  Cook the mixture for five minutes until very thick.  Reduce the heat to low.&lt;br /&gt;&lt;br /&gt;Add the beaten egg to a small bowl.  Take 1/4 cup of the warm sauce and slowly pour it into the beaten egg, whisking constantly to avoid scrambling the egg.  Whisk until smooth.  Pour the tempered egg mixture back into the sauce, whisking constantly.  Stir until smooth.  Mix in the cheese, reserving a handful for topping, and stir until completely melted.  Add in salt and other seasonings.  Taste and adjust seasonings accordingly. I gave it a try and I thought they came out pretty yummy. Line 13 x 9 pan in foil.&lt;br /&gt;&lt;br /&gt;Combine flour, 1 cup brown sugar and softened butter in large mixer bowl. Beat at medium speed of electric mixer 2 to 3 minutes or until mixture resembles fine crumbs. Pat mixture evenly onto bottom of foil lined baking pan. Sprinkle pecans evenly over crumb mixture.&lt;br /&gt;&lt;br /&gt;Combine remaining butter and brown sugar in small saucepan. Cook and stir over medium heat until entire surface is bubbly. Cook and stir 1/2 to 1 minute more. Pour into pan, spreading evenly over crust.&lt;br /&gt;&lt;br /&gt;Bake 25 minutes or until entire surface is bubbly. Remove from oven; immediately sprinkle with chocolate pieces. Let stand 2 to 3 minutes to allow chocolate to melt; use knife to swirl chocolate slightly. Cool completely in pan on wire rack. This was pretty yummy to sip on a cold night.&lt;br /&gt;&lt;br /&gt;Hot Chocolate Mix&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;4 teaspoons vanilla extract&lt;br /&gt;4 cups granulated sugar&lt;br /&gt;1½ lbs. good quality semi-sweet chocolate, coarsely chopped&lt;br /&gt;9 oz. good quality bittersweet chocolate, coarsely chopped&lt;br /&gt;2 cups Dutch process cocoa powder*&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;Combine vanilla extract and sugar in a large bowl, let it dry, then break the sugar into small lumps.&lt;br /&gt;&lt;br /&gt;In the bowl of a food processor fitted with the metal blade, combine the sugar, semisweet and bittersweet chocolate, and Dutch process cocoa powder.  Process in 4-second pulses until the chocolate is very finely ground and the mixture is well combined. There are many recipes out there and I took a little from different ones to create my own. I was very pleased with how it turned out. The toffee bits add an extra crunch, which I love.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Toffee Pecan Pie&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;1 frozen pie crust&lt;br /&gt;3 tablespoons unsalted butter, melted&lt;br /&gt;3/4 cup sugar&lt;br /&gt;3/4 cup dark corn syrup&lt;br /&gt;3 large eggs&lt;br /&gt;2 tablespoons pure vanilla extract&lt;br /&gt;1/4 teaspoon salt&lt;br /&gt;1 1/2 cups coarsely chopped pecans (about 6 ounces)&lt;br /&gt;1/2 cup of toffee bits&lt;br /&gt;&lt;br /&gt;DIRECTIONS&lt;br /&gt;1. Place a rack in the center of the oven and preheat to 400º.&lt;br /&gt;2. In a large bowl, whisk together the butter, sugar, corn syrup, eggs, vanilla, and salt.&lt;br /&gt;3. Cover the bottom of the piecrust evenly with the pecans and toffee bits. Pour in the filling.&lt;br /&gt;4. Bake the pie, rotating it halfway through, until the crust is golden and the filling is set in the middle, about 45 minutes. I had never made chili that was not out of a can. I was pretty proud of myself since I just kind of put it together by looking at several different recipes. I didn't really measure everything out, so the measurements are all approximations. We gobbled it all up so fast before I had a chance to take a picture. But it was quite good with corn bread.&lt;br /&gt;&lt;br /&gt;Easy-peasy Chili&lt;br /&gt;&lt;br /&gt;1/4 lb ground beef&lt;br /&gt;1/4 onion chopped&lt;br /&gt;1 green bell pepper chopped&lt;br /&gt;minced garlic&lt;br /&gt;adobo seasoning (see below for recipe)&lt;br /&gt;1 can of kidney beans in chili sauce&lt;br /&gt;1 can of Ro*tel diced tomatoes&lt;br /&gt;2 tablespoons of tomato paste&lt;br /&gt;&lt;br /&gt;1. Brown ground beef and drain the fat.&lt;br /&gt;2. Add half of the onions, bell pepper, and garlic to the ground beef and saute until onions are clear.&lt;br /&gt;3. Add adobo seasoning, kidney beans, diced tomatoes, and tomato paste.&lt;br /&gt;4. Stir and simmer for about 20 minutes.&lt;br /&gt;5. Top with some chopped onions and cheese.&lt;br /&gt;&lt;br /&gt;I had made some adobo seasoning mix for something else a while back, so I used that for the season in my chili since it had everything I wanted to add into the chili. It really worked out well.&lt;br /&gt;&lt;br /&gt;Adobo Seasoning&lt;br /&gt;(from &lt;a href="http://chefmichele.blogspot.com/2005/12/adobo-seasoning.html"&gt;Chef Michele's Adventures&lt;/a&gt;)&lt;br /&gt;&lt;br /&gt;3 Tbsp. salt&lt;br /&gt;1 Tbsp. onion powder&lt;br /&gt;1 Tbsp. garlic powder&lt;br /&gt;1 Tbsp. black pepper&lt;br /&gt;1/2 tsp. oregano&lt;br /&gt;1/2 tsp. chili powder&lt;br /&gt;1/2 tsp. cumin&lt;br /&gt;&lt;br /&gt;Combine all and mix well. It is an easy peasy recipe and quite yummy!&lt;br /&gt;&lt;br /&gt;Ambrosia Fruit Salad&lt;br /&gt;&lt;br /&gt;1 container frozen whipped topping, thawed&lt;br /&gt;1 (6 ounce) package orange flavored gelatin mix&lt;br /&gt;1 cup shredded coconut&lt;br /&gt;1 can fruit cocktail, drained&lt;br /&gt;1 can pineapple chunks, drained&lt;br /&gt;1 can mandarin oranges, drained&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Directions&lt;br /&gt;&lt;br /&gt;&lt;span&gt;In a large bowl, combine the whipped topping and gelatin mix. In a medium bowl, mix together all ingredients except for tortillas.&lt;br /&gt;&lt;br /&gt;2. Spread the cream cheese mixture on the tortillas. I was in charge of making a dessert. I love to bake so I was quite happy with this assignment. I wanted to try something different from my go-to staples for baking. I had been looking around on the internet when I found on one of my favorite blogs, &lt;a href="http://bakerella.blogspot.com/"&gt;Bakerella&lt;/a&gt;, this &lt;a href="http://bakerella.blogspot.com/2008/11/butterscotch-my-new-best-friend.html"&gt;recipe&lt;/a&gt; for butterscotch brownies. Mmmm, that sounded yummy and different. she got the brownie recipe from &lt;a href="http://www.verybestbaking.com/recipes/detail.aspx?ID=30256"&gt;VeryBestBaking.com&lt;/a&gt; and I used her ganache recipe to give it a little more omph like she did. Here is how it turned out:&lt;br /&gt;&lt;br /&gt;&lt;a href="http://picasaweb.google.com/lh/photo/ylSXJggoIltj88trJQQ9sw?authkey=LJ0dj2hFqlQ"&gt;&lt;img src="http://lh3.ggpht.com/_x9MpOwsWyDw/STymTvWYJAI/AAAAAAAAAfU/e0Ipdfq7cHA/s400/IMG_3728.JPG" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;span style="font-weight: bold;"&gt;Chewy Butterscotch Brownies&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;From: &lt;a href="http://www.verybestbaking.com/recipes/detail.aspx?ID=30256"&gt;VeryBestBaking.com&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;2 1/2 cups all-purpose flour&lt;br /&gt;1 teaspoon baking powder&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1 cup (2 sticks) butter or margarine, softened&lt;br /&gt;1 3/4 cups packed brown sugar&lt;br /&gt;1 tablespoon vanilla extract&lt;br /&gt;2 large eggs&lt;br /&gt;1 2/3 cups (11-oz. pkg.) NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels, divided&lt;br /&gt;1 cup chopped nuts (I used pecans since I had some left over from Thanksgiving)&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;PREHEAT oven to 350° F.&lt;br /&gt;&lt;br /&gt;COMBINE flour, baking powder and salt in a medium bowl. Beat butter, sugar and vanilla extract in a large mixing bowl until creamy. Beat in eggs. Gradually beat in flour mixture. Stir in 1 cup morsels and nuts. Spread into ungreased 13x9-inch baking pan. (I would grease the pan so that it does not stick). Sprinkle with remaining morsels.&lt;br /&gt;&lt;br /&gt;BAKE for 30 to 40 minutes or until wooden pick inserted in center comes out clean. Gotta love having a reason to use the crock pot!&lt;br /&gt;&lt;br /&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://farm4.static.flickr.com/3008/2767130858_7189bf89e6.jpg?v=0"&gt;&lt;img style="cursor: pointer; width: 400px;" src="http://farm4.static.flickr.com/3008/2767130858_7189bf89e6.jpg?v=0" alt="" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;span style="font-weight: bold;"&gt;Beef Stew&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;adapted from &lt;a href="http://allrecipes.com/Recipe/Slow-Cooker-Beef-Stew-I/Detail.aspx?strb=1"&gt;Allrecipes.com&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;&lt;br /&gt;2 pounds beef stew meat, cut into 1 inch cubes&lt;br /&gt;1/3 cup all-purpose flour&lt;br /&gt;1/2 teaspoon seasoned salt&lt;br /&gt;1/2 teaspoon ground black pepper&lt;br /&gt;2 clove garlic, minced&lt;br /&gt;1 bay leaf&lt;br /&gt;1 teaspoon paprika&lt;br /&gt;1 tablespoon Worcestershire sauce&lt;br /&gt;1 onion, chopped&lt;br /&gt;1 1/2 cups beef broth&lt;br /&gt;3 potatoes, diced&lt;br /&gt;4 carrots, sliced&lt;br /&gt;1 stalk celery, chopped&lt;br /&gt;&lt;br /&gt;DIRECTIONS&lt;br /&gt;Place meat in slow cooker. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture. Cupcakes sounded yummy and I found a pink mint frosting recipe to go along with it. The chocolate cupcake itself was quite yummy, however, I think the frosting was a little too minty and took away from the cupcake rather than compliment it. So that was a little disappointing. The theme for this time was Spanish cuisine. I studied in Spain for 2 months when I was in undergraduate school so I was very excited to have some yummy Spanish food.&lt;br /&gt;&lt;br /&gt;I decided to make Tortilla Espanola, also known as Tortilla de patatas or in English, Spanish Omelette.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;span style="font-weight: bold;"&gt;Tortilla Espanola&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;recipe adapted from &lt;a href="http://www.spain-recipes.com/spanish-omelette.html"&gt;here&lt;/a&gt;.&lt;br /&gt;&lt;br /&gt;&lt;img style="cursor: pointer; width: 400px;" src="http://farm4.static.flickr.com/3200/2758181262_1f6018fb2c.jpg?v=0" alt="" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;1/2 pint of olive oil&lt;br /&gt;5 medium (40 oz each) baking potatoes, peeled, sliced and lightly sprinkled with salt&lt;br /&gt;1/2 yellow onion, chopped&lt;br /&gt;3 cloves garlic, minced&lt;br /&gt;5 eggs&lt;br /&gt;Salt&lt;br /&gt;&lt;br /&gt;Heat the olive oil in a 9-inch skillet and add the potato slices carefully, because the salt will make the oil splatter. Try to keep the potato slices separated so they will not stick together. Cook, turning occasionally, over medium heat for 5 minutes. Add the onions and garlic and cook until the potatoes are tender. Drain into a colander, leaving about 3 tablespoons of oil in the skillet.&lt;br /&gt;&lt;br /&gt;Meanwhile, in a large bowl, whisk the eggs with a pinch of salt. Add the potatoes, and stir to coat with the egg. Add the egg-coated potatoes to the very hot oil in the skillet, spreading them evenly to completely cover the base of the skillet. Lower the heat to medium and continue to cook, shaking the pan frequently, until mixture is half set.&lt;br /&gt;&lt;br /&gt;Use a plate to cover the skillet and invert the omelette away from the hand holding the plate (so as not to burn your hand with any escaping oil). Add 1 tablespoon oil to the pan and slide the omelette back into the skillet on its uncooked side. Cook until completely set. Allow the omelette to cool, and then cut it into wedges. We had some fresh cucumbers and I decided to make a cucumber salad. To go with the cucumber salad, I decided I wanted to make pork chops. Combine the vinegar, water, and sugar until sugar dissolves. Stir in dill, salt, and pepper, cover, and refrigerate until cold. Lipton onion soup mix&lt;br /&gt;1 egg, well beaten&lt;br /&gt;2/3 cup bread crumbs&lt;br /&gt;2 T. olive oil&lt;br /&gt;Salt&lt;br /&gt;Pepper&lt;br /&gt;&lt;br /&gt;Preheat the oven to 350 degrees. Season pork chops with salt and pepper.&lt;br /&gt;&lt;br /&gt;Combine soup mix and bread crumbs. Dip chops in egg and then in bread crumb/onion mixture, coating well. Place in a shallow pan.&lt;br /&gt;&lt;br /&gt;Drizzle olive oil onto pork chops. You never know how things will turn out when you try a new recipe, especially when you are not quite sure how it should taste. This recipe was definitely a keeper. It is always a good sign when others ask for the recipe. Pasta salad is an yummy and easy dish to make. Perfect for a pot luck since you can make it the night before, which makes it taste even better. My measurements are not exact, mostly for taste and looks.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt; &lt;span style="font-weight: bold;"&gt;Rumbly Tumbly Summer Pasta Salad&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://farm4.static.flickr.com/3188/2532423303_7a56228b57.jpg?v=0"&gt;&lt;img style="cursor: pointer; width: 400px;" src="http://farm4.static.flickr.com/3188/2532423303_7a56228b57.jpg?v=0" alt="" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;1 lb package of tri-color rotini pasta&lt;br /&gt;1/2 orange bell pepper chopped&lt;br /&gt;1/2 yellow bell pepper chopped&lt;br /&gt;1 tomato diced&lt;br /&gt;1/2 cup green onions chopped&lt;br /&gt;1 can of sliced olives (drained)&lt;br /&gt;1/2 bottle of Italian salad dressing&lt;br /&gt;1/2 bottle of Ceaser salad dressing&lt;br /&gt;1/2 cup parmasean cheese&lt;br /&gt;&lt;span&gt;&lt;br /&gt;Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain.&lt;/span&gt;&lt;span&gt;&lt;br /&gt;&lt;br /&gt;Mix chopped peppers, tomatoes, onion, and olives together in large bowl.&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span&gt;Combine cooled pasta and vegetables together in large bowl. My father-in-law loved the Red Velvet truffles and is convinced that I should go in the candy making business (For Christmas, I made some Oreo truffles, which he raved about to all his friends). After cake is cooked and cooled completely, crumble into large bowl.&lt;br /&gt;2. Mix thoroughly with 1 can cream cheese frosting. (It may be easier to use fingers to mix together, but be warned it will get messy.)&lt;br /&gt;3. Roll mixture into quarter size balls and lay on cookie sheet.&lt;br /&gt;4. Chill for several hours. (You can speed this up by putting in the freezer.)&lt;br /&gt;5. Melt chocolate in microwave per directions on package or melt chocolate using the double boiler method.&lt;br /&gt;6. Using a toothpick, dip each ball into the melted chocolate and place on wax paper.  Decorate as desired. I used the Sprinkle's cream cheese frosting recipe and that made all the yummy difference. I think Mr. Bear’s cousin really liked the cupcakes :-)&lt;br /&gt;&lt;br /&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://tinyurl.com/5us3oe"&gt;&lt;img style="cursor: pointer; width: 400px;" src="http://tinyurl.com/5us3oe" alt="" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Sprinkle’s cream cheese frosting&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;8oz. cold cream cheese&lt;br /&gt;1 stick unsalted butter, firm but not cold&lt;br /&gt;1/8 tsp salt&lt;br /&gt;3 3/4 cups confectioner's sugar, sifted&lt;br /&gt;1/2 tsp vanilla&lt;br /&gt;&lt;br /&gt;1. Beat cream cheese, butter and salt until smooth.&lt;br /&gt;2. Gradually add confectioner's sugar and beat until incorporated.&lt;br /&gt;3. Add vanilla and beat just until incorporated&lt;br /&gt;4. Don't over mix. So I looked at a ton of different recipes from friends and on the internet. There are a range of ways to make mac and cheese and I finally decided to take a little something from all the recipes I found and created my own. I am glad I did, everyone seemed to love it. I used 4 different cheeses because I love cheese, especially sharp cheese. You can really use any type you like.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Rumbly Tumbly Mac and Cheese &lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://tinyurl.com/6kawnd"&gt;&lt;img style="cursor: pointer; width: 400px;" src="http://tinyurl.com/6kawnd" alt="" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;1 (16 ounce) package elbow macaroni&lt;br /&gt;8 tablespoons (1 stick) butter&lt;br /&gt;1/4 cup flour&lt;br /&gt;2 cups half-and-half&lt;br /&gt;8 ounces cream cheese&lt;br /&gt;1 cup shredded Gruyere cheese&lt;br /&gt;1 cup shredded Cheddar cheese&lt;br /&gt;1 cup shredded sharp Cheddar cheese&lt;br /&gt;1 cup shredded Monterey Jack cheese&lt;br /&gt;1/4 teaspoon salt&lt;br /&gt;1/8 teaspoon ground black pepper&lt;br /&gt;Paprika&lt;br /&gt;Garlic powder&lt;br /&gt;&lt;br /&gt;Preheat the oven to 350 degrees F. Lightly butter a 9 X 13 casserole.&lt;br /&gt;&lt;br /&gt;Bring the large pot of salted water to a boil over high heat. Add the elbow macaroni and cook until the macaroni is just tender, about 7-8 minutes. Do not overcook. Drain well. Return to the cooking pot.&lt;br /&gt;&lt;br /&gt;In a small saucepan, melt eight tablespoons of the butter. Add flour, whisking often until smooth bubbly. Gradually add half and half and cream cheese. Continue cooking on medium heat until sauce is thickened and cream cheese is melted. Add seasonings. In a large bowl, mix the Muenster, mild and sharp Cheddar, and Monterey Jack cheeses. Add half of the mixed cheese s to the sauce and stir until melted.&lt;br /&gt;&lt;br /&gt;Stir sauce into the macaroni. Then add the other half of the shredded cheeses and mix until well combined. Transfer to the buttered casserole.&lt;br /&gt;&lt;br /&gt;Bake until it's bubbling around the edges, about 15 minutes. My modifications are in &lt;em&gt;&lt;span style="color: rgb(51, 204, 255);"&gt;blue italics&lt;/span&gt;&lt;/em&gt;.&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;1 (10.75 ounce) cans condensed cream of mushroom soup&lt;br /&gt;1 (1 ounce) package dry onion soup mix&lt;br /&gt;1/2 cup water&lt;br /&gt;2 3/4 pounds pot roast&lt;br /&gt;&lt;br /&gt;&lt;em&gt;&lt;span style="color: rgb(51, 204, 255);"&gt;My additions: salt, pepper, baby carrots, 1 onion, 1 beef bullion cube, and mushrooms&lt;br /&gt;&lt;/span&gt;&lt;/em&gt;&lt;br /&gt;DIRECTIONS&lt;br /&gt;In a slow cooker, mix cream of mushroom soup, dry onion soup mix and water.&lt;br /&gt;&lt;em&gt;&lt;span style="color: rgb(51, 204, 255);"&gt;Add carrots, onion, and beef bullion cube.&lt;br /&gt;Season pot roast with salt and pepper.&lt;/span&gt;&lt;br /&gt;&lt;/em&gt;Place pot roast &lt;em&gt;&lt;span style="color: rgb(51, 204, 255);"&gt;(on top of veggies)&lt;/span&gt;&lt;/em&gt; in slow cooker and coat with soup mixture.&lt;br /&gt;&lt;em&gt;&lt;span style="color: rgb(51, 204, 255);"&gt;Put mushrooms on top of roast.&lt;/span&gt;&lt;/em&gt;&lt;br /&gt;Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Gravy&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Using the drippings and flour, I made a wonderful gravy to go with the roast and the mashed potatoes. Add flour until you get the right consistency. My father-in-law had two helpings of everything. A great sign, dinner was so yummy!! I looked around for a recipe and decided to combine a few different recipes. The result was perfect. I was very pleased with my recipe combination, not too sweet and or runny. It was so yummy with some vanilla bean ice cream.&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;4 cups sliced apples (peeled and cored) - &lt;em&gt;&lt;span style="color: rgb(51, 204, 255);"&gt;I used 2 large granny smith apples and 1 medium gala apple&lt;br /&gt;&lt;/span&gt;&lt;/em&gt;2 tablespoons lemon juice&lt;br /&gt;1 teaspoon ground cinnamon, divided&lt;br /&gt;3/4 cup brown sugar, divided&lt;br /&gt;1/2 cup of oats&lt;br /&gt;1/2 cup butter&lt;br /&gt;1/2 cup all-purpose flour&lt;br /&gt;1/4 cup wheat flour&lt;br /&gt;&lt;br /&gt;DIRECTIONS&lt;br /&gt;Preheat oven to 375 degrees F (175 degrees C). Grease an 8x8 inch baking dish.&lt;br /&gt;Soak apples in water then drain and place apples in prepared dish. Sprinkle with lemon juice, 1/2 teaspoon cinnamon, and 1/4 cup of brown sugar.&lt;br /&gt;In a bowl, mix the 1/2 cup brown sugar, flour, oats, and butter until the mixture resembles coarse crumbs. Sprinkle over the apples.&lt;br /&gt;Bake in preheated oven 45 minutes, until apples are tender and crust is golden.&lt;br /&gt;Top each serving with ice cream.&lt;br /&gt;&lt;br /&gt;Yummy! It is a healthier and lower fat take on the traditional meatloaf by making a few substitutions. I never really follow all the actual measurements in the recipe but instead estimate as I mix. This time around I baked my turkey meatloaf in a muffin pan to make mini meatloaves. This technique helps to control portion size and decreases the time needed for cooking.&lt;br /&gt;&lt;br /&gt;The recipe from Shape Magazine uses a technique to drain the fat away from the meatloaf by using a baking sheet or baking pan instead of the traditional loaf pan. So instead of the fat being absorbed into the meat as it bakes, the fat is drained away to the side of the pan. Well, the draining away of the fat is lost by using the muffin pan so this would probably slightly increase the calorie and fat content of the mini meatloaves.&lt;br /&gt;&lt;br /&gt;When Mr. Bear came into the kitchen to see what was for dinner, he thought I made muffins again and was quite confused when I served him meatloaf muffins, LOL. The mini meatloaves were good and it was nice that they cooked in half the time. We didn't eat the entire loaf like we usually would so there was enough leftover to use with my spagetti sauce for dinner tonight. Lightly coat a 13 X 9 inch baking pan or baking sheet with nonstick cooking spray (or muffin pan if making mini meatloaves).&lt;br /&gt;&lt;br /&gt;In a large bowl combine all ingredients (except the 1/4 cup of barbeque sauce).&lt;br /&gt;&lt;br /&gt;Place meatloaf mixture in the center of a baking pan and shape into a loaf by hand (or place small loaves into muffin pan). Spread remaining barbeque sauce evenly over the top of the loaf. Cook on low for 7-8 hours.&lt;br /&gt;&lt;br /&gt;Top with sour cream (we used low-fat) and cheddar cheese (we used 2% cheese). In each tortilla place a spoonful of meat mixture, a spoonful of cheese mixture and a bit of shredded cheese. Roll tortillas and place in a lightly greased 9x13 inch baking dish. I tried a blueberry muffin recipe last week and I did not like muffins at all, they were dry and dense, almost like a scone but not very good. That was a bummer since I used fresh yummy blueberries. So my quest continued for a new recipe.&lt;br /&gt;&lt;br /&gt;Last night, I tried a banana muffin recipe and I am quite happy with the muffins, they are very tasty and better yet, I am able to use bananas that are overly ripe and will end up getting thrown out, so I am not wasting any food.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://bp3.blogger.com/_x9MpOwsWyDw/R6JVW_EUz7I/AAAAAAAAABk/0rO7Ux1FnQc/s1600-h/IMG_0252.JPG"&gt;&lt;img id="BLOGGER_PHOTO_ID_5161781976295067570" style="CURSOR: hand" alt="" src="http://bp3.blogger.com/_x9MpOwsWyDw/R6JVW_EUz7I/AAAAAAAAABk/0rO7Ux1FnQc/s320/IMG_0252.JPG" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Whiz-Bang Banana Muffins&lt;br /&gt;From: &lt;a href="http://www.bellybytes.com/recipe/muffins/muffin01.html"&gt;http://www.bellybytes.com/recipe/muffins/muffin01.html&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;1 cup all-purpose flour&lt;br /&gt;½ cup quick-cooking oatmeal&lt;br /&gt;¼ cup packed brown sugar&lt;br /&gt;1 tablespoon baking powder&lt;br /&gt;½ teaspoon ground cinnamon&lt;br /&gt;1/8 teaspoon salt&lt;br /&gt;Nonstick cooking spray or shortening&lt;br /&gt;1/3 cup milk&lt;br /&gt;1 egg&lt;br /&gt;2 tablespoons cooking oil&lt;br /&gt;1 large ripe banana, cut up &lt;span style="color:#ff99ff;"&gt;&lt;span style="color:#993399;"&gt;(I used 2 medium ones)&lt;/span&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="color:#993399;"&gt;I also added ¼ cup of chopped pecans since I happened to have them&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;Preheat the oven to 400 degrees. In a large mixing bowl stir together the flour, oatmeal, brown sugar, baking powder, cinnamon, and salt. Set aside. Lightly coat muffin pan with cooking spray or grease with shortening.&lt;br /&gt;&lt;br /&gt;In a blender container combine milk, egg, and oil. Cover and blend smooth. With blender running, add banana and blend into mixture. Pour into dry ingredients and stir just until moistened. Fill muffin pans 2/3 full.&lt;br /&gt;&lt;br /&gt;Bake in the 400 degree oven about 20 minutes &lt;span style="color:#993399;"&gt;(I baked for 15 minutes)&lt;/span&gt; or until a wooden toothpick inserted in center comes out clean. Makes 10 to 12&lt;br /&gt;&lt;br /&gt;(Nutritional facts per serving from the website: Calories: 132 , Total fat: 4g , Saturated fat: 1g , Cholesterol: 22mg , Sodium: 162mg , Carbohydrate: 22g , Fiber: 1g)&lt;br /&gt;&lt;br /&gt;I think they turned out very yummy! I think next time I try ½ all-purpose flour and ½ wheat flour, applesauce instead of oil, and maybe a little vanilla extract to make it even better for you. I will also bake at 375 degrees instead.
